Baked lamb cutlets

Mutton is passed through a meat grinder twice, combined with stale bread preliminarily soaked in milk, salted, thoroughly kneaded, black pepper and melted butter are added. Cutlets are moulded and fried. Milk sauce mixed with cheese, yolk is poured into a portion frying pan or sauté pan, cutlets are placed, fried mushrooms are placed on them, poured with milk sauce, sprinkled with grated cheese, sprayed with melted butter and baked in the oven till crust is formed on the sauce surface. Potatoes deep-fried are served on the side dish, and red sauce with madera is served in the saucepan
