shrimp peel from the shell, wash and dry. remove the insides by making a longitudinal incision. shrimp meat is cut into pieces 2-3 mm long and sprinkled with corn flour. wash, dry and release paprika pods from the seed box. cut each pod into 4 parts and each part in strips 0, 5-1 cm thick. heat vegetable oil in a wok or pan and fry shrimp meat. after 2-3 minutes, pour in the rice wine or sherry, gently mix and let the liquid evaporate. remove the shrimp, leaving the butter from the frying in the pan. at this stage, the shrimp should remain slightly raw. put the chopped paprika in the pan, salt lightly and fry for 4-5 minutes. add the shrimp and mix gently. pepper should retain its bright green color and well-defined texture (overcooked pepper loses its shape and acquires a bitter taste)
