Spinach leaf cabbage rolls

Collect large leaves of garden spinach, wash in cold water, roll over boiling water to become elastic, roll back in a colander, let the water drain. Make minced meat from fatty lamb, passing through a meat grinder in two steps. Add finely shredded onions, boiled rice to the mince (it can be replaced with raw egg), salt, black ground pepper and mix everything well. Then wrap the minced meat in spinach leaves and arrange the cabbage rolls. Put a plate on the bottom of the pan, fold the cabbage rolls on it, first larger, and then smaller ones, add butter, pour water so as to cover the contents of the pan, cover with another plate on top, put a load on it and cook for 30 - 35 minutes over a very low heat. Serve on a table in plates of 3-4 pieces per serving.
