Partridge roast

Scald partridge with boiling water, peel, cut each into four parts, put in heated oil and fry on some sides. Then transfer to another dish and pour water. Add finely shredded onions, carrots, tomatoes, potatoes, salt, red pepper and put on a low heat. Cook for 20 - 25 minutes. Transfer the partridge to plates, sprinkle with cilantro and serve.
