How to make eggplant with soy sauce and garlic: Peel and finely shave the onions.
If using fresh ginger root, peel and finely chop it.
Dilute the starch with a little cold water (2-3 tbsp), add soy sauce, ginger, chopped onions to it.
Salt it. Mix well.
Wash the aubergines, peel and cut into cubes or diamonds about 1cm thick.
Finely chop the garlic and crush with a fork or flat side of a knife.
Heat a pan with vegetable oil, lay out the aubergines. Fry the aubergines over high heat, stirring all the time, until soft and golden (7-9 minutes).
Then fill them with the prepared dressing and mix thoroughly. Simmer for another 2-3 minutes.
At the end, add the crushed garlic. Aubergines fried with soy sauce and garlic are ready.
