Beef stroganoff

Wash the meat (fillet part, stretz), clean it from the tendons, cut it into small slices, beat it with a pull rod or rolling pin, then finely cut it with straws. Shred and washed onions and fry in oil. When the onions are fried, add the chopped meat sprinkled with salt and pepper and fry over a high heat for 5-6 minutes, stirring with a fork. Then sprinkle the meat with flour, stir and fry again for 2-3 minutes. Then add sour cream, stir, bring to a boil, season with Yuzhny sauce and salt to taste. Serve the fried potatoes on the side dish. Meat and potatoes can be sprinkled with finely chopped dill or parsley greens.
