How to cook aza? Meat is cut into bars weighing 10-15 g, fried, poured with hot broth so that the meat is covered with it, sautéed onions, tomato puree are added and stewed over low heat until tender. Sauce is prepared on the broth remaining after stewing, purified, cut into rhombics, blanched cucumbers, chopped garlic, pepper, salt, bay leaf are placed. The meat is poured with sauce, fried potatoes cut into cubes are added and stewed for 15 - 20 minutes. The side dish for aza can be prepared separately. Aza is served in a deep portion dish together with sauce and garnish, before serving they are sprinkled with herbs.
