For sweets. We cook jam for the winter from unripe melon.

How to make melon jam: My unripe melon, cut into pieces.
We clean the melon, cut it into cubes.
Then sprinkle with sugar and put it on the cold for 2 hours.
We cook syrup. To do this, mix sugar with water, bring to a boil. Cook for 5 minutes over a medium heat.
Fill them with melon cubes and put them back in the cold.
The next day, drain the syrup, boil and pour the melon again.
And only on the third day we cook melon jam over a small fire until the cubes become transparent (about 15-20 minutes).
Melon jam is ready. Enjoy your meal!
