Beat egg proteins with 2-3 tbsp. spoons of sugar until stable foam forms. We rub the yolks with the remaining sugar. Mix starch with cocoa and baking powder (baking powder) and add to the yolks alternately with whipped proteins. Put the resulting dough on an oil-lubricated baking tray (or even better on oil-lubricated parchment laid on a baking tray) and bake in the oven at an average temperature (175-180 degrees). Cut the cooled base for the cake with a sharp knife into 4 equal parts. Slightly soak the resulting cakes with sweet coffee, lubricate with cream and put one on top of the other. We cover the cake with cream on top, decorate it with coffee beans.
