Carefully sort through ripe strawberries and rinse well, put in enameled or porcelain dishes. Then fill with sugar, stand for one day and strain through a sieve. Add water to the juice and cook over medium heat until the syrup is of the required thickness. A cooled drop of syrup lowered into a glass of cold water should settle to the bottom and dissolve when stirred. 4- 5 minutes before removing the syrup from the heat, mix citric acid with it.
