Peel and seed the courgettes, cut into large chunks, put in a pan of cold water and hold for 12 hours. Then drain the water, rinse the courgettes in cold water and cast in a colander. When the water has run off, cut the courgettes into small pieces. Cook the syrup (per 1 kg sugar 1/2 l water), put the courgettes in it, mix and cook over a low heat until the courgettes are completely boiled.
