Lemon jelly

Rub egg yolks with sugar, mix juice and grated zest with one lemon, gelatin diluted in hot water or tea, and mix again. Then add a strong foam of whipped egg whites and interfere until the mass begins to thicken. Pour the mass into molds and cool.
