How to make red currant jelly? Ripe red currants are sorted, washed with cold boiled water and thoroughly dried on a towel. In an enameled bowl, berries are kneaded with a wooden pusher, juice is squeezed through several layers of gauze. Fine granulated sugar is poured into the squeezed juice, mixed well with a wooden spoon until sugar sand dissolves completely. The prepared juice is placed in pre-scalded and dried small glass jars (to the top), covered with polyethylene lids (or parchment). Stored in a dark, cool place.
