Apples baked with jam

Peel 12 large apples, remove the core. Oil a deep dish, put a layer of any jam. Place apples on it, filling them with jam as well. Rub 6 yolks with 3 teaspoons of sugar, pour gradually 3 teaspoons of flour, coat apples with this sauce, and 6 whipped proteins mixed with 3 teaspoons of sugar on top. Let gradually walk in the oven. Serve cream (or milk).
