Apples in sweet egg sauce

Apples are peeled, cut into 4 parts and, removing the core with seeds, boiled in water acidified with citric acid until cooked. Put in vases. Sweet egg sauce is prepared: for this, egg whites are separated from the yolks; yolks are poured into dishes and proteins are added (about a fifth of the yolks by weight), granulated sugar is poured in, half of the dry white wine is poured in and, continuously beating with a whisk, boiled in a water bath. Before cooking, the rest of the dry wine is poured in, lemon juice, crushed lemon zest are added and mixed thoroughly. The finished sauce should stick well to the wedding. Prepared apples are poured with this sauce.
