blackcurrant berries are sorted, washed with cold boiled water and thrown into a colander (or sieve). pour onto a clean towel and let the berries dry well. transfer into enamelled basin, sprinkle with sugar sand, mix, and then pass through meat grinder. transfer into scalded and well-dried glass jars. a little granulated sugar is poured on top. jars are covered with polyethylene lids scalded with boiling water or parchment. stored in a cool, dark place.
