Lemon-carrot balls

Peel the carrots, grate on a frequent grater, add sugar, grated zest and lemon juice to it and simmer over a moderate heat, stirring, under a lid for about 15-20 minutes. Then remove the lid and simmer the carrots until the juice evaporates completely. When the mass is thick and sticky, remove it from the heat and cool it. From a slightly warm mass, shape the balls into walnut and roll in sugar-sand. Put the balls on a sieve and dry for several days.
