Bozbash - soup

The famous lamb-based soup is bozbash, a recipe very common in the Caucasus. There are many varieties of this dish, we suggest making a bozbash of lamb with eggplant and green beans.

lamb - 800 g, melted butter - 100 g, onions - 150 g, eggplant - 500 g, tomatoes - 900 g, green beans - 250 g, green pepper - 200 g, potatoes - 750 g, spicy greens to taste, salt to taste

Boiled lamb is cut into pieces, fried, poured with strained broth, sautéed bulb onions, aubergine cut into wedges, tomatoes, sweet capsicum, bean pods, potatoes are added and the soup is boiled until tender. When serving, lamb bozbash is sprinkled with greens.
