Mushroom shrimp puree soup (bisque de crevettes)

Completely shelled, washed and finely chopped shrimp meat, mushrooms and butter put in a saucepan and fry for 5 minutes. Pour in the chicken broth and dry white wine. Put on celery, red pepper and nutmeg. Cook everything over a low heat for 20 minutes. Strain, remove the celery and wipe the vegetables and shrimp through a sieve. Add, stirring, cream and salt to taste. Heat up. Put a spoonful of whipped cream in each bowl of soup before serving.
