Vegetable okroshka

Boiled and chilled beets, carrots, as well as fresh cucumbers are cut into small cubes. Boiled potatoes are grated. The spring onions are finely chopped and kneaded with a spoon, adding some salt to make them soft and juice. Hard-boiled eggs are peeled, proteins are separated from yolks. The whites are cut into small pieces and the yolks are rubbed with mustard. Ground spring onions are mixed with potatoes, yolks, sour cream, sugar, salt, kvass is diluted, chopped beets, carrots and cucumbers are placed. Before serving, okroshka is sprinkled with dill greens.

kvass - 1 l, potatoes - 150 g, beets - 75 g, carrots - 75 g, cucumbers - 100 g, green onions - 75 g, eggs - 2 pcs., sour cream - 2 tbsp. spoons, sugar - 1 tsp, salt to taste
