Honey wines are recommended to be made on apple juice with the addition of gooseberry or pear or white currant juice. Since 100g of honey on average contains only 70g of sugar, honey is taken slightly more in weight. Instead of 100g of sugar, 140g of honey is taken. Honey wines are slightly opalescent and have to be clarified with agaragar.
