Boil the loose 150g rice, mix with 100g sugar. Peel and cut into pieces of
1. 2kg rhubarb stems, boil in 4 cups boiling water with 100g sugar. Pour hot rice. If you serve the compote cold, then, putting the rice from the tin on a deep dish, pour cold rhubarb compote over it.
