Coffee "royale"

When making coffee, this is done as follows: a piece of sugar is placed on a small spoon, poured with a small amount of cognac or rum, held over a cup of boiling coffee and waited for it to warm up from steam. The alcohol-soaked raffinade is then lit in a spoon so that the flaming sugar drips into the cup. With such coffee, as you can see, a lot of fuss, and therefore it is served on especially solemn occasions.
