Potato bagels with jam or marmalade

cook, peel and grate the potatoes. mix with eggs, sugar, oil, lemon zest and juice, milk, soda or crushed yeast. salt and knead the non-empty dough. roll out a rather thick layer, cut into squares of about 5-6 cm. Put the filling in one of the corners of the square, wrap it to the opposite corner and shape the bagel. this amount will make about 40 bagels. put them on a greased sheet and bake over medium heat in a roasting cupboard.
