Sweet pancake pie

Half a cup of flour, half a cup of yolks, half a cup of cream, a glass of melted butter, a third of a cup of sugar and zest from one lemon, stir well, put the remaining proteins beaten into foam; fry in small pans. Fold one pancake on top of the other, lubricating each with the following sauce: mix the juice from one lemon with 1/4 cup of fruit juice and 1/4 cup of sugar; pancakes folded on a platter are covered with meringoy, that is, four whipped proteins mixed with 1/4 cup of sugar; put in the oven for a few minutes. Serve, decorate with jam.

flour - 0.5 cup, yolk - 0.5 cup, cream - 0.5 cup, butter - 1 cup, sugar - 0.3 cup, lemon - 1 pc., apricot juice - 0.25 cup, thick jam to taste
