Sandcake with cottage cheese "farmer's joy"
Mix the sieved flour with salt and grind with cold, but not frozen oil to a tiny mass. Add one spoon of cold (ice) water and quickly knead the dough until homogeneous (if necessary, add a little more water). Place the dough in the refrigerator for half an hour. From the dough, roll out 2 thin tortillas with a thickness of about 0. 5 cm. Put the first in a mold, forming the sides of the pie from the dough (then the dough can be covered with parchment and pour a load, for example, dry beans), and bake in the oven, heated to 200 degrees, until half cooked, about 5-7 minutes. Then let the base of the pie cool slightly and put a layer of curd filling on it. Lay the second cake on top of the cottage cheese, sprinkle with cheese, grease with egg and bake the cake for about 15-25 minutes at a temperature of 200-220 degrees.
