Börek is made from puff or fresh pastry filled with cheese, meat or vegetables and served as a hot snack. Traditional Turkish böreki come in three main types:

- poof börek - triangular fried pies stuffed with cheese and parsley;

- beorek cigar - deep-fried cigar-shaped pies filled with cheese and parsley;

- sous-börek - puff pie from pastry scalded with boiling water with a filling of greens, vegetables, cheese or minced meat. Su-börek is served hot or cold, cut into pieces.
