Beets are a truly versatile vegetable: it is customary to use food not only a dense root crop with a characteristic sweet taste, but also a beet tops. It would seem how you can prepare these fleshy juicy leaves, but in fact recipes, where beetroot tops act as one of the main components, there is a huge amount.
Beetroot tops are great for making dietary vegetable salads, thanks to their high fiber content. It is due to this, when using such dishes, saturation occurs quite quickly, and extra pounds are not added. For example, you can make salads with the addition of beet tops, where the main components are cucumbers, radishes, green lettuce leaves, spinach, herbs and nuts, although you can diversify these dishes according to your taste.
Before use, the beet tops are properly washed (necessarily on both sides), after which they are crushed with a knife and poured with boiling water. Thanks to this, the leaves become tender and soft, while they completely lose their specific beetroot taste. The ideal dressing for salads using beet tops is vegetable oil with lemon, apple or pomegranate juice, as well as sour cream, balsamic vinegar and even mayonnaise.
In addition, beetroot tops are added quite often when preparing the first and second courses - in borscht, cold, okroshka, meat and vegetable stew, cutlets. Beetroot tops are considered a good basis for making filling for pies. It is noteworthy that beet tops can even be prepared for future use - they are fermented, dried, pickled, salted, preserved together with other vegetable crops, and tatem is used in winter for culinary purposes.
In particular, beet tops are useful for people who have cardiovascular diseases and diabetes. In addition, they have invaluable benefits in thyroid diseases and other pathologies of the endocrine system, as well as anemia.
Due to the content of vitamins PP and U, beet tops and dishes prepared on its basis are recommended for problems with vessels.
