Edam or Edamer cheese refers to a group of Dutch cheeses that are made from milk from cows. Edam cheese is classified as a solid, as well as semi-solid type of cheese, the fat content of which does not exceed 45%. The edamer has a spherical shape and a pale yellow color, the cheese is covered with paraffin on top. Foodies always recognize the first-class Dutch Edam cheese by the presence of pronounced nut notes in the taste of the product.

Edam cheese got its original name thanks to the city of the same name, which is located in the northern part of Holland. Edam cheese is aged for at least 17 weeks. Elite varieties of cheese are covered with black wax. On the shelves of domestic grocery stores, Edamer cheese covered with yellow or red paraffin is usually found.

As a result of research, it was found that Edam cheese is the most popular cheese from the XIV to XVIII centuries. Nowadays, a type of cheese like Edam is popular all over the world. As previously noted, Edamer cheese includes cow's milk. The cheese mass obtained as a result of the natural milk fermentation process is placed under a press under the influence of which whey is released.

At the further stage of Edamer cheese production, the product is dried and placed into brine, previously grated with salt. The minimum ripening time for Edam cheese is one month. After ripening, Edam cheese is covered with paraffin, and elite varieties of the product are covered with beeswax. It is worth noting that seals at the edges of Edam cheese indicate improper storage of the product.
