One of the favorite drinks of the Turkic peoples is Katyk. Their national kitchens use this fermented milk product both in its natural form and as the basis for traditional hard kurt cheese, as well as seasoning with a variety of soups, salads and other dishes. The secrets and subtleties of preparing a real skating rink for more than 2 millennia have been passed down from generation to generation.

A tasty beverage with a mass of beneficial properties, the katyk is nothing more than a product that has passed the fermented milk stage. The starter in this case is a certain combination of lactic acid streptococci and Bulgarian stick. Representatives of Turkic nationalities prepare their favorite drink based on goat, sheep, cat or buffalo milk, and, as you know, natural dairy products carry a lot of useful properties - which means that the benefits of skating are obvious.

The katyk differs from everything familiar and more familiar to our person, first of all, the fermentation process, which takes place in boiled milk, due to which the finished product has more fat content. In addition, simple milk is made on its own, while it takes a lot of certain knowledge and effort to prepare a skating rink.

So, milk for the subsequent manufacture of this drink is heated over low heat, it is constantly stirred so that it does not boil, but only warms up to 90 degrees. Due to the fact that in the process of heating up to 30% of water is evaporated from milk, the finished product is more saturated and dense compared to rustic milk.

The optimal temperature during fermentation is considered no more than 40 degrees - this is the only way to ensure the correct process of growth of the Bulgarian stick. Another rule for preparing a skating rink is the following: as a starter for this drink, you need to take the previous day's skating rink.

If all the conditions were met during the preparation of the roller, then the final product will be distinguished by a surprisingly pleasant and refreshing taste along with a dense uniform consistency. Based on individual preferences, it can be either sweet or sour or sharp.

Sweet katyk is mainly used as a stand-alone dish, and based on a drink with a sour or spicy taste, it is customary to prepare seasonings for different dishes. In addition, often to give this fermented milk product a beautiful color and a more savory taste in some kitchens (for example, Bashkir and Tatar), cherries or beets are added to it.

The benefits of skating

Thanks to the composition of a unique starter, which will contain lactic acid streptococci and Bulgarian stick, katyk has a very high nutritional value. These microorganisms prevent harmful bacteria from developing in the gut, thereby promoting the restoration of a healthy microflora balance. That is why the benefit of skating with regular use is that problems with the digestive process in humans simply disappear.
