Ayran

Ayran...

Ayran is a type of fermented milk drink that is made on the basis of katyk, and resembles the kefir familiar to us, but it is widespread mainly among such nationalities as Turks, North Caucasians, South Caucasians and Balkans. Despite the fact that a common feature of ayran is that it is produced by fermenting milk, its consistency can be very different.

So, for example, in settled peoples it is quite liquid, so it perfectly quenches thirst, while in nomads it is customary to cook ayran very guthoi, almost like sour cream, which makes it convenient for transportation and storage. It is customary to dilute such a product with water, and then use it as a drink.

Ayran is especially good during the hot season - this is a great refreshing drink, which also improves appetite. It can also be used as a basis for cold soups, for example okroshka. In addition, thanks to the property of ayran, it is wonderful to combine with aromatic herbs, an incredible number of healthy dishes are prepared from it.

The choice of spices and spices directly depends on the dishes to which the drink is served and the time of day. For example, it is customary to serve ayran with basil for meat dishes, cilantro greens make the drink stronger, and use mint to make a cool cocktail. Ayran, which is the accompaniment of the main dishes, can be flavored with a fragrant mixture of coriander, cumin and paprika.

In addition to herbs, ayran is perfectly combined with a variety of fruits, which need to be cut into small pieces, put in a drink and let it brew for several hours. For example, a couple of lobes of green apple will give the drink an extraordinary fruity freshness, and at the same time soften its taste.

Composition of ayran

The composition of ayran includes rather specific ingredients for our person: in particular, katyk (rustic milk milk) or suzma (a product that is formed when the serum is separated from this rustic milk), as well as cold spring water, salt or sugar.

Such a healthy drink is recommended to be prepared immediately before use due to its unstable state in which the liquid is rejected. If, nevertheless, you decide to make an ayran in advance or add filling to it, remember that before enjoying the finished drink, you should shake it well.

Benefits of ayran

The most important quality, thanks to which the benefits of ayran are simply invaluable, is its ability to positively influence the digestive processes, significantly improving appetite. In addition, with the regular consumption of this drink, intestinal microflora is not only normalized, but also the process of digesting food is accelerated, and the reproduction of putrid bacteria is also suppressed. The benefit of ayran lies in the ability to strengthen the nervous system, increase the body's resistance to various types of unfavorable conditions, and improve the functioning of the heart, blood vessels and respiratory system.
