However, a significant difference between these dishes is the composition of each sauce. In particular, for the preparation of tkemali, a certain variety of wild acidic plums is needed along with their obligatory companion - seasoning with the mysterious name ombalo.

At the same time, to make a classic plum sauce, you can take absolutely any plums at hand. And the set of spices and spices, as a rule, is chosen by the cook himself. It is mainly coriander and hop-suneli.

The preparation of plum sauce, which is characterized by a rich sour-sweet taste and a fruity aroma, looks like this: fresh plums are cooked in a small amount of water directly until the bones leave. Boiled berries are filtered out and then wiped through a sieve or colander to produce a kind of liquid puree (juice with pulp).

The resulting plum juice is evaporated to a density of ketchup, after which spices and spices, as well as salt and sugar are added to it. This mass boils for about five minutes and crushed garlic is added to it. When hot, the plum sauce is bottled with a wide throat and stored in a cold place.
