Nut sauce

Nut sauce...

Nut sauce refers to one of the traditional Japanese sauces, which perfectly complements the taste of salads. The cooking of Japan is quite diverse and is always open to new experiments, and therefore sauces are one of the most popular components for it.

In general, sauces in Japan can be divided into two main types: spicy and sweet. Their main difference is the large number of spices used. Nut sauce does not provide for a special abundance of exotic ingredients, but its taste still does not lose its pleasant originality. It should be noted that if in the Japanese menu with the main dish or salad there is a sweet sauce, then it will be really sweet, and can probably be quite unusual for the inexperienced combination, for example, vegetables under caramel.

Nut sauce does not belong to the category of sauces with a pronounced taste, but due to its delicate creamy consistency and harmoniously accented notes of sesame, the dish is saturated with a light aroma and its main taste is emphasized. In the Land of the Rising Sun, there is the concept of "nemono. " It means that the dish was fried and added in a certain sauce. It is not customary to serve such types of sauces separately, but nut sauce does not apply to them. By the way, the calorie content of the nut sauce is 473 kcal per 100 grams of product.

If most Japanese sauces are consumed with any dishes, then nut sauce is recommended to be used with salads. Due to its light and pleasant taste, it is necessarily used in salads of Chuka, Kaiso, Hiashi wakame, since this sauce perfectly complements the seaweed available in these dishes.

The nut sauce is tender, even though there is garlic in its composition - the Japanese deliberately drown out its pungent taste. To soften the taste, skillful chefs turn cloves into mashed potatoes, which are poured with hot oil and additionally heated over fire. As a result, garlic, which is always present in the nut sauce, leaving its taste, is not so intrusive.

Another necessary component that provides for this product is sesame oil, due to which the calorie content of the nut sauce becomes high. By the way, initially in the Chinese version of this sauce, cashew nuts were used, which were fried and ground before being added to the mixture. However, in the Japanese versions of nut sauce, cashew is harmoniously replaced by peanut butter. This nuance, although it somewhat changes the taste of nut sauce, does not make it worse.
