Parsley is a native of Greece, where its healing properties have been known for a long time. Not only foliage with stems and roots is used by humans for a variety of purposes - parsley oil is also in great demand. Parsley essential oil is usually obtained from the leaves and sometimes roots of the plant, but it is mainly obtained from seeds, the composition of which is much richer in oils compared to other parts of this aromatic grass.

The main components of leaf-based parsley oil are apiol, which is also called parsley camphor), pinene, and apiolaldehyde. Parsley oil produced from the plant's seeds contains much less apiol, but its main component is myristicin along with some fellandrene, myrcene, pinene and other nutrients.

For the purpose of aromatherapy, parsley oil from the seeds of the plant is most often used, which is characterized by a color from yellow to amber and a saturated wood-spicy aroma. Parsley oil from leaves and seeds, in turn, can serve as a food flavor, especially in the manufacture of meat products, sauces, canned vegetables and some drinks.
