Currently, the following types of vanillin are produced - crystalline, powdered and liquid vanillin. Powdered vanillin is used in vanilla sugar production and added to chocolate.

Liquid vanillin is used in the manufacture of confectionery products (sweets). Due to its specific properties, crystalline vanillin is widely used in bakery products. At high temperatures, crystalline vanillin does not lose its taste and therefore baking does not lose its vanilla.

For the production of vanilla sugar, they take ordinary sugar and grind it into powder, only then add extract, vanilla pods or vanillin. Using this technology, sugar adopts the taste of vanilla. The result is a delicious vanilla sprinkle, which can often be seen on buns, pies or cookies.

Vanilla sugar is also added to the dough in order to give the cake a unique vanilla taste and smell. Vanilla puddings, vanilla creams, fruit vanilla cocktails and even vanilla-flavoured milk dishes. All of this yummy uses vanilla sugar.

You can make vanilla sugar yourself and at home. Everything is very simple and almost no different from industrial production. For vanilla sugar, you'll need 1kg of regular white sugar and one natural vanilla pod. It is better to choose the longest and largest vanilla pods, they are considered the most fragrant, their smell is more stable and spicy.

Green vanilla requires pre-treatment. It is necessary to clean the pod from the seeds and crush them until a homogeneous mass is obtained. Add sugar to the container with vanilla seeds, which must first be grated into powder. Mix the resulting mixture with sugar sand and throw a vanilla pod there. It is better to store homemade vanilla sugar in a well-closed jar. The vanilla taste of sugar tends to evaporate over time.
