Quentin algae
Quentin is a burgundy-colored seaweed that closely resembles a fern in its appearance. However, after drying or freezing, cantene algae acquires a practically colorless color and is a transparent gelling substance, which is often called agar. Jelly with cantene algae turns out to be a little matte and can freeze even at temperatures above room temperature, respectively, it does not need to be cooled. Having a more resilient and dense consistency than gelatin jelly, jelly using cantene algae is easier to extract from the molds and cut.
Remarkably, cantene algae has neither taste nor smell, and therefore it can be called an ideal gelling substance. At the same time, this gift of the sea is able to absorb the aromas and tastes of the products with which it is prepared.
In addition to the obvious value in cooking, cantena algae is very healthy. With low nutritional value, it contains dietary fiber or plant fiber, which in turn has a beneficial effect on digestion.
