Shamed fish (Chalcalburnus chalcoides) is a valuable commercial species from the Karpovy family. As a rule, it inhabits the basins of the Caspian, Azov, Aral and Black Seas. Moreover, it is customary to refer to the same species forms that constantly live in fresh waters, as well as forms that live in the seas, but come to spawn low in rivers.

The size of the fish sewn is mostly not very large - for example, the Black Sea species weighs on average about 250 grams, and it is extremely rare to find specimens of up to 700 grams. Thus, the usual weight of an adult fish is hardly more than 600 grams with a body length of 30 centimeters.

The sewn fish is characterized by the color of pelagic species - in other words, it has a dark back and forehead, which are slightly greenish, and the sides and abdomen are silver. All but the caudal fin of this fish have a gray edging and pink base.

During spawning, the sewn is transformed - the mating outfit of the males of this fish consists of small spines on the head, and the females are characterized by elongation of the lower jaw with a tubercle at the end. It is noteworthy that as soon as the spawning time comes to an end, the mating outfit completely disappears.

The name of this fish from Persian is translated only as "royal fish, " which is due to the high taste of the shimai. In terms of its culinary and nutritional properties, seamstress fish is practically not inferior to animal meat, and in terms of ease of absorption by the human body it is even somewhat superior. It is this distinctive property of the fish that is sewn and is a significant advantage of this product.

As mentioned above, I am classified as one of the most valuable cyprinid fish. Moreover, cured and smoked shaved in terms of their taste qualities is often compared with the most delicate balyks, so it is certainly a high-quality product. The average fat content and the rather tender, pleasant taste of fish meat is its unconditional advantages. However, many call a large number of small intermuscular bones a disadvantage of all cyprinids, including shamed fish.

Due to the fact that dried or smoked fish are mainly sold, they use it in this form. In order to serve this fish deliciously and beautifully, it is necessary to remove the insides by cutting off the abdomen, and then remove the skin and cut the fish into pieces, without taking out the bones. On the dish, the sewn fish can be laid out in the form of a whole carcass, attaching the head and tail, as well as decorating it with fresh herbs.
