Casserole fish
Rippus fish, or as it is often called ripus (kilets), is a representative of freshwater bodies of water and belongs to the genus of whitefish. Several varieties of cassock stand out: European, Siberian and coregonus albula, which in our country is sometimes mistakenly called "Pereslavl herring. " And this is even despite the fact that this ripple has nothing to do with herring, well, if only a small external similarity.
As a rule, the size of the ripple fish varies between 13-20 centimeters in length, with a maximum of 35 centimeters. In fact, outwardly, the cassock really resembles herring - the body of the fish is slightly compressed laterally, while there is a notch on the lower jaw, and the upper one is completely shorter than the lower one.
The vendace has rather large scales, if we count the lateral line, where there are a small number of scales. The color of the sides of the ripple fish can be described as silver, the belly is white, and the backs are bluish gray. Most of the fins of the fish are white or whitish, only the dorsal and caudal fins of gray color.
It is noteworthy that in the 15th and 17th centuries, ripple fish was considered food for kings, which was even part of the coronation ritual. This choice of princes was probably based on the fact that the nutritional properties and calorie content of the cassock were able to provide not only excellent taste, but also full nutrition to the muscles, heart and brain.
Although found in fresh water, the ripple fish contains sufficient polyunsaturated omega-3 fatty acids in its meat. However, it is worth noting that in the meat of this particular fish, these substances disintegrate quite quickly, which causes its relatively rapid damage. So, keeping a fresh cassock, even in ice, can be no more than 24 hours. For long-term transportation or long-term storage, ripple fish is subjected to deep freezing, due to which, subject to technology, all its useful qualities are not lost for a long time.
By the way, the small size and low calorie content of the ruffle are more than compensated by an extremely small number of bones - no more than 9 percent. Smoked and salted tinder is very tasty and useful. In addition to tasty caviar, casserole is appreciated for the fact that it can be prepared from a variety of dishes, for example, such as homemade casserole sprats, casserole fried with sour cream, casserole deep-fried or pickled.
In addition, thanks to its taste qualities, it is the ripple fish that is the basis for the preparation of the traditional Finns fish pie, which is made from fresh rye dough and is called Kalakukko. Translated into Russian, this dish means Fish Rooster.
