Cod navaga fish, living in cold sea waters, is distinguished by excellent gastronomic qualities, due to which it is excellent for children's and dietary nutrition. In general, it is customary to distinguish between northern and Far Eastern Navaga. The first prefers the waters of the Pacific Ocean from Korea to the Bering Strait, falling into the network off the coast of the Japanese, Okhotsk and Chukchi Seas. Navaga Far Eastern is found mainly off the Arctic coast of Siberia.

Previously, navaga fish were always sent to the capital cities on an ice cream sled right from the catch site - this continued until the mid-30s of the twentieth century. This was a guarantee that the fish would not defrost until the very moment the navaga hit the cutting table. The fact is that in thawed form, the properties of navaga are lost - its consistency and taste deteriorate.

As a rule, navaga fish is used for roasting - it is customary to cut it still frozen, sprinkled with fluffy frost - a clear sign of good quality. In the process of cutting, like any sea fish, the head of the navaga is cut off, the flesh is mealed exclusively in flour with coarse salt or in flour with the addition of beaten egg. These fish are fried mainly in vegetable oil or on a mixture of sunflower oil and pork fat. Garnishing cooked navaga is recommended with fried onions and potatoes.

It is noteworthy that in the old days, Moscow cuisine was also characterized by the use of pickled navaga as a cold snack. To prepare this dish, pre-fried fish was poured with marinade and infused for two to three days, after which it was consumed with mustard.

It is worth noting that the meat of the Far Eastern and northern navaga hardly differ in chemical composition. This is not to mention the unsaturated fatty acids that this fish is rich in - they are actively involved in cholesterol metabolism and fat synthesis, having antihistamine and anti-inflammatory effects.
