Fish burbot
Burbot fish belong to the order of the Treskov, and it is the only freshwater of representatives of this order. Yellowish-gray scales speckled with burbot fish are quite attractive, but you can often find individuals of brown color. The appearance of the burbot is quite interesting: the distinctive feature of cod fish is a small antennae on the chin.
In general, burbot is characterized by a flattened large head tapering towards the front, a long elastic body covered with very small scales, soft fins without spiny rays, small eyes and nostrils opening at the tips of long nasal tubes. The size of burbot fish can vary from 30 centimeters to two meters in length with an average weight of 5 kilograms, although sometimes the mass of individuals can reach 30 kilograms.
Burbot fish are widespread in the rivers of Europe, North America and Siberia. As mentioned above, a distinctive property of burbot is its habitat - being the only member of the cod family that permanently resides in fresh waters, this fish spends its life in lakes and rivers with the purest water and a sandy or rocky bottom.
Tender and slightly sweet to taste, burbot meat is quite highly valued in cooking. However, it is worth noting that after even short storage or freezing, it quickly loses its excellent taste. In particular, the burbot liver is highly appreciated - very large, which is characteristic of all cod fish, and tasty, with a high content of vitamins.
