Fish chir (schokur)

Fish chir (schokur)...

The fish chir (schokur) is a member of the Sigovy family, and it can be found in most of the rivers that belong to the Arctic Ocean basin. As a rule, this fish feeds on small bottom inhabitants. The chir (pike) is distinguished by a rather dark color, while yellow-silver stripes flaunt on the sides of the fish.

The average size of adults of the teal (pike) in length is about half a meter with a weight of two to four kilograms, although individual specimens sometimes reach 80 centimeters. The delicate white meat of this fish contains a sufficient amount of fat, in connection with which it is advised to fry chira (pike) with the addition of a minimum of oil. In addition, it is important that in its meat there is a large proportion of natural trace elements useful for humans - in particular, the content of chromium and fluorine is high, as well as substances such as zinc, nickel, molybdenum sulfur and chlorine.

In culinary affairs, chir (schokur) fish can be used to prepare a wide variety of meals, including sugudaya and stroganina traditional for Siberia, which are usually prepared from fresh fish. Undoubtedly, fresh catch can only be bought in the habitats of this fish, however, the freshly frozen chir (schokur) retains its culinary and nutritional qualities quite well.

The fleshy, somewhat greasy carcass of chira (pike) is well suited for roasting or baking. Delicious fish cutlets, dumplings and pies are often made from his meat. In addition, this fish is perfectly pickled, such as herring or salmon, and also chir (schokur) is good for rolls and ear. Foodies will clearly appreciate the roll of teal (pike) and red fish - salmon or pink salmon - so the combination of two types of fish (white and red) will give the dish a special taste.

It is impossible not to remember such a popular snack as chir (schokur) of cold smoking. The already tender flesh of this fish is distinguished by a subtle taste, which, after special treatment with cold smoke, acquires more pronounced and bright notes. The meat of smoked chira (pike) perfectly harmonizes with vegetables, sour cream, mushrooms, cheese and even some types of fruits.

Due to its delicate taste qualities, high content of useful elements, chir (schokur) is hotly loved and widely in demand by domestic fish connoisseurs. Dishes from chira (pike), prepared according to fairly simple recipes, are unusually tasty and very useful. By the way, even frozen fish is unusually good in fried or stewed form, since in the process of heat treatment its meat does not lose its tenderness and juiciness.
