Under the trade name "buttery, " producers and sellers often hide several different marine fish that belong to different families and orders: stromathea, American buttery, Australian seriolella, escolara, gray delicatessen mackerel and some other species. However, despite different names, all these aquatic inhabitants are characterized by equally high taste and are warm-water sea fish that live near the shore.

Basically, oily fish are medium-sized (about 40-80 centimeters) and weigh no more than 5 kilograms. Although sometimes there are real giants that can hang and half a centner with a length of two meters. Oily fish are usually imported into Russian markets by freshly frozen fillet and carcasses, as well as in the form of smoked meats. Vietnam, the United States, Indonesia and China are considered the main suppliers of this seafood.

Quite interesting, but not all types of oilfish in countries such as Italy, Canada and Japan are considered edible. For example, it is forbidden there to sell fish called rouvette, the fat of which is not absorbed by the human body and causes intestinal disorders, and in our country, oddly enough, it is this type of oil fish that is most popular.

The valuable properties of oily fish for cooking are due to the presence of high gastronomic qualities of the white meat of this fish, which is characterized by a dense consistency and a pleasant taste. By the way, many note the similarity of oily fish with fatty halibut. On an industrial scale, oil fish meat is used mainly for the manufacture of balyks and various kinds of smoked meats, and at home the methods of its preparation depend only on the imagination of the cook. It can be boiled, fried, extinguished or baked. But due to the fat content and rather high calorie content of oilfish, grilling is considered the best option for its preparation. Thanks to this method, excess fat flows from the fish, because of which, in general, it has achieved notoriety.
