Despite the fact that pickles belong to one of the traditional meals of Slavic cuisine, they are loved not only in our country, but also in many other countries of the world. It is essentially a ready-to-eat dish made from fresh cucumbers by salting them with a variety of seasonings and spices. The calorie content of pickles is 1

For salting, green vegetables are sorted by size, maturity and variety. Cucumbers with black navels are considered the most suitable for such conservation, but vegetables on which these same white navels are preferred to be used fresh. Special delicacies include young pickles, which have a thin skin and dense, without voids, pulp.

The process of preparing this dish consists in the fact that fresh vegetables are laid in wooden barrels in brine and in this form can be aged from a couple of weeks to six months. In addition to table salt, all kinds of spices can be added to brine, the range of which varies depending on the specific recipe: dill, garlic, black pepper, fresh leaves of blackcurrant, oak or cherry, as well as leaves or horseradish root.

Cucumbers that recently managed to pour through are called low-salted. They are wonderfully suited as a light snack to boiled young potatoes. And with longer salting, the process of formation of lactic acid occurs - fermentation, due to which we are talking not only about high gastronomic qualities, but also the beneficial properties of pickles.

Pickles do not need additional processing at all, that is, as mentioned above, this is a product that is ready to eat. They can be eaten whole or added to a variety of dishes (soups, salads, salads) in chopped form. In addition, according to numerous stereotypes and traditions, pickles act as an indispensable Russian snack for vodka.

The benefits of pickles

The benefits of pickles are due to their composition, in which there are numerous microorganisms that control the development of harmful intestinal bacteria. When cucumbers are already properly fermented, lactic acid begins to be released in them, which favorably affects the human body. It helps to reduce the level of fats in the flow of blood, thereby improving its circulation, as well as reducing blood pressure. In addition, lactic acid affects the healthy state of the digestive system - it enriches the intestines with useful bacteria.

So, brine, the composition of which is identical to the composition of the cucumbers themselves, has a slight laxative effect. However, despite the benefits of pickles for the digestive tract, they are able to arouse appetite, so you should not get carried away with this product in people with obesity, bowel disease, hypertension and atherosclerosis.
