Canned gherkins look like miniature cucumbers neatly stacked in clear glass jars that also reveal black pepper peas, mustard seeds and dill greens. More recently, canned gherkins, particularly pickled gherkins, are an integral part of both the everyday and festive table.

Interestingly, the very word cornichon, which has French roots, is the collective name of some varieties of the plant, called Cucumber seed. Cornichons differ primarily in size from ordinary cucumbers. So, the average length of the fruit, which can be seen in a jar of canned gherkins, hardly exceeds a few centimeters - a maximum of eight.

Nevertheless, quite often all non-ripened cucumber fruits, which are harvested almost immediately after the end of flowering, are called cornichons. However, this is not entirely true: ordinary cucumbers, even if miniature in size, are difficult to compare to taste with cornichons.

True gherkins are called fruits of high quality of a separate variety of the plant. They are distinguished by a special aroma and delicate taste. Canned gherkins, in turn, can be used as an excellent side dish for meat and fish dishes. In addition, canned gherkins act as a necessary ingredient in the recipes of many sauces. For example, it is customary to add crushed canned pickled gherkins to the Tartar sauce.

The usual vinaigrette can acquire a new unique taste if you add pickled canned gherkins to it. In addition, mayonnaise-based sauce with pickled gherkins and capers is sure to be a delicious and unusual addition to meat and fish dishes. By the way, on the shelves of modern stores you can easily find canned gherkins of various brands, but is such a product always useful?

Quite often, when you buy canned gherkins, you get ordinary cucumbers, which are smaller. In addition, manufacturers add various food additives, preservatives and taste enhancers to the composition of canned products. Such substances are capable of having not particularly useful, and sometimes harmful effects on human health. Meanwhile, cornichons are a rather useful product that contains a considerable amount of vitamin PP, phosphorus, iodine, as well as iron and calcium.

Undoubtedly, when preserved, useful substances are partially lost, but homemade canned gherkins are still a natural and much more useful alternative to an industrial product. Therefore, many hostesses adopt rather easy to prepare recipes for canned cornichons in order to please their loved ones and relatives with homemade vegetable preparations.
