You need to dry horseradish at a very low temperature and an open door. By the way, if you do not have an oven, the roots of horseradish can be left in a warm oven overnight. According to culinary experts, in order to maintain the maximum amount of phytoncides in dried horseradish, the drying process should proceed as quickly as possible. The finished dried horseradish is ground or ground in a coffee grinder to a powder state and stored in glass jars with sealed lids.

As you use it, a portion of dried horseradish is poured with chilled boiled water, acidified with lemon juice or citric acid, broth or sour cream. The resulting gruel can act as the basis for the preparation of a variety of savoury sauces and seasonings. Without prior preparation, dried horseradish is customary to add to sauces and meat dishes.
