Pork head...

Pork head in many people causes a twofold feeling: on the one hand, it is a rather unsightly and even frightening part of the animal's carcass, but on the other, it is one of the most delicious meat treats. It is noteworthy that dishes from this offal were served in Russia far from cheap taverns - stuffed pork head was considered a business card of solid establishments.

The pig's head was prepared as follows: at first it was thoroughly cleaned, washed, its lower jaw and bones were removed from the head, and then placed in a tank with soaking for several days.

Pork or calf liver and young beef were finely chopped to make the filling. All this was boiled, wrapped in a napkin, and then mixed with fried crushed bulb onions, raw eggs, soaked bun, black and red ground peppers, grated nutmeg and salt. The finished mince was thoroughly wiped through the grill.

Soaked dried pork head was laid on a linen napkin, covered with thin plates of pork lard, and stuffed. The prepared filling was placed in rows, alternating with circles of hard-boiled eggs and cut pickles until the head was completely filled.

Wrapped tightly in a napkin, the pork head boiled for several hours with the addition of roots, salt, pepper, vinegar and bones taken out earlier. The finished head was taken out, cooled, poured with strained broth and put on the cold to freeze. The result was a really chic dish worthy of the most sophisticated eaters.

To date, pork head is also popular with foodies and connoisseurs. This offal contains many useful vitamins and mineral salts, including vitamins of group B, PP, H, E, as well as a whole complex of macro and trace elements. The calorie content of the pork head is about 216 kcal per hundred grams.

Due to the high nutritional value and calorie content of the pork head, dishes prepared on its basis are not only tasty, but also very satisfying. Most often, modern culinary experts prepare all kinds of rolls, jellies or jelly from a pork head. In addition, Dutch livery sausage from pig's head is known. According to the Bulgarian recipe, you can prepare a dish called Starets, which is essentially a type of homemade sausage - tasty, natural and very appetizing.
