As a rule, chicken backs consist of vertebrates and costal bones, a small amount of meat, a fairly impressive part of fat and chicken skin, as well as chicken goose. Undoubtedly, even in a well-treated chicken carcass, giblets (lungs, liver, kidneys and heart) are still present, which, after careful separation, can also be used for culinary purposes.
Today in the past you can find chicken backs both chilled and frozen. This is a fairly cheap product, since it does not differ in increased meatiness, but according to experts, the unsurpassed taste and aroma of the dish prepared on their basis is guaranteed. The calorie content of chicken backs is about 319 kcal per 100 grams of chilled meat product.
Before you start cooking a dish of chicken backs, you should wash them thoroughly, and then remove feathers and excess fat. Ideally, the skin should be completely clean, but it can also be safely removed, although the fat that is heated into it is quite tasty, so many mistresses leave it.
Not only boiling broths can be made from chicken backs, which can later become the basis for all kinds of first courses, but also other delicious dishes. For example, chicken backs in a savory marinade, which are baked in a grill or aerogril, are especially popular. They turn out to be fragrant, crispy and toasty, in a word, well, very tasty.
The calorie content of chicken backs is quite high, but this is directly due to the fact that quite a lot of chicken skin is present in the composition of this product, which is characterized by increased fat content. Therefore, we can say that it is not recommended to use chicken backs very often, since all foods whose fat content is at a fairly high level can harm some organs and systems in the human body.
