Beef scar is part of the stomach, consisting of smooth muscle fibers. The prepared sub-product is characterized by a dense consistency, grayish-yellow color, specific taste and aroma.

Interestingly, the inner surface of the beef scar is very fleecy - it looks like the fabric of a shaggy coat. The entire surface of the beef scar is covered by small thin outgrowths that increase the inner surface of the cow's stomach. It distinguishes the substances necessary for digesting food. It is worth noting that the color of the inner surface of the beef scar can range from almost black to light cream or even gray-greenish.

By the way, a beef scar can be not only black - often a sub-product cleaned industrially goes on sale. To do this, the scar is shaken out, rinsed in warm water and laid in a special drum, where water vapor and almost boiling water await it. At the bottom of the drum there is a ribbed disk, which, rotating, removes a thin upper layer from the beef rumen. Very quickly, this layer is welded and after a couple of minutes it is easily separated, leaking with hot water. Half an hour later, ready-made snow-white pieces of beef scar are taken out of the drum.

In general, it is advised to purchase just such a beef scar (boiled), since the preparation of this offal is a laborious business, which takes a lot of time. Beef scar is well scraped and washed, and then held under running water for several hours. After such procedures, it is boiled until the specific smell disappears, the decoction is poured out, and the beef scar is washed in hot water and boiled again until cooked.

It takes a very long time to cook a beef scar, as it has a specific smell. It is for this reason that it is recommended to buy a scar of young gobies, which does not smell so much. Before boiling, it also needs to be cleaned, and then cooked like jellyfish with the addition of black pepper peas, laurel leaf and salt.

Boiled beef tripe is customary to simmer, fry, and also cook boiling soups from it. Beef scar is very good for rolls and meals that require long-term heat treatment. By the way, this sub-product is not suitable for stuffing for many reasons, including its immense size, and too long cooking.
