For these purposes, it is necessary to take care that the minced meat meets all the requirements, that is, it is fresh and high quality. This applies to an industrial semi-finished product, which goes on sale in packaged form. So, fresh minced meat should be without darkening, while its color varies from pale pink to almost red. The smell of such a product can be called neutral, not pronounced. In addition, factory-made minced meat should ideally not contain bones, tendons and cartilage.

Any type of minced meat does not tolerate long-term storage if it is not about deep freezing, but a fresh chilled product. This is due to the fact that bacteria begin to multiply rapidly in it and putrid processes occur. It is recommended to fry minced meat products immediately, and store the finished cutlets in a cool place for no more than a day.

It is recommended to add stale white bread to minced meat, because the fresh product gives the cutlets excessive stickiness. The use of stale bread helps to increase the volume of finished products and, in addition, absorb the released meat juice. As a result, the cooked meat dishes are distinguished by pomp and special juiciness. By the way, minced meat will also be juicy if you add some water or milk, raw or fried onions to it.

Minced meat is rightfully considered a universal product, since more than one thousand dishes can be made from it. Moreover, thanks to the variety of types of minced meat, the range of ready-made meals is increasing even more.

First of all, such types of minced meat as pork, beef, chicken, lamb, turkey and calf stand out. Fish mince also stands a little apart. In addition, quite often, in order to achieve the desired taste, these varieties of meat product are mixed with each other.
