Undoubtedly, a real Hungarian goulash is customary to cook with beef or veal. However, this dish is no less tasty and nutritious using other types of meat - pork or chicken, for example. Pork goulash is prepared similarly to beef goulash, however, depending on the selected type of meat, the heat treatment time may be reduced or, conversely, increased.

Many hostesses with full responsibility declare that absolutely any part of the animal's carcass is suitable for cooking a pork goulash. However, this is not entirely true, as you need juicy and fatty meat for a pork goulash. That is why connoisseurs advise choosing exclusively a tenderloin or pork neck for these purposes. In such meat, although there are thin fat layers, it should be completely devoid of cartilage, as well as films, which, if available, must be removed.

Before cooking a pork goulash, meat is advised to fry for a short time on a high heat - this will not only make the taste of the dish much brighter, but also seals the meat juice inside the pieces. Pork is fried for no more than five minutes in boiling melted lard (pork speck).

By the way, initially, the pork goulash includes such vegetable crops as potatoes, onions, tomatoes and sweet peppers. However, no one bothers to bring a little variety to the dish: for mushroom pickers, pork goulash with the addition of sawdust, borovik, aspen or even champignons will clearly taste. A rich meat gravy sauce is obtained by using high-quality tomato paste, which will best shade any side dish of pasta, potatoes or porridge.

When the pork goulash is completely ready, it can be served. However, if the meat nevertheless turned out to be tough for some reason, do not despair, because you can extinguish it for some additional time, bringing it to full readiness.

In terms of calories, pork goulash is considered the most nutritious than similar dishes prepared on the basis of other types of meat. This is due to the greater fat content of pork, which is suitable for goulash. Meanwhile, the calorie content of a pork goulash, although it is about 333 kcal per hundred grams, is rich in vitamins and minerals, so it is very useful for human health.
